2021 Jan 3-9 What's For Dinner?

And, just like that, 2020 is in the past!!! Happy New Year!! I’m not naive enough to think that all the rough times from 2020 are erased today, but I really like the idea of starting fresh with new ideas, plans, and habits at the beginning of the year.
I have been on a journey of feeling good in my skin for the last few years. To be honest, it’s been a yo-yo diet roller coaster for more years than that.
When I was 30, and after my 4th kid, I was desperate. I lost 40 lbs, but in a terrible way. Some pretty shady diet pills, so shady they don’t sell them anymore. Looking back now I cringe at the damage I caused. On top of that, I didn’t learn how to keep the weight off. Just like everyone’s story, I gained 20 lbs back and started to panic. So I fell back to the one thing I knew how to do, undereat. I lost 10 lbs and was exhausted, tired, grouchy, and ran down. So the yo-yo begins. I would gain 10-15 lbs, lose 5-10 lbs, over and over and over.
Then the Keto crazy hit! I was not into it. I was burnt out and was just going to give up, but Bigfoot wanted to try it. “Ok Dear, I’ll do it with you.” In 3 months, he lost 20lbs, and I lost 10lbs. But again I had no energy, I missed fruit, and I did not feel good. I started feeling dizzy and decided it wasn’t worth it. I knew there had to be a better way.
December of 2018, I started researching and came across the same buzz words, carb cycling and Intermittent fasting. Those 2 words lead me to FASTer Way to Fat Loss. I dug all over the internet to piece the program together because, HA, I was NOT going to pay $200, I’m cheap.
January 1st 2019, I attempted to do what I had read. Well let me tell you, that didn’t work. I should have saved myself some time and paid the money. I had the basics, but ACCOUNTABILITY is a game changer.
March 2019, I talked some co-workers into joining my 1st official round of FASTer Way, and I haven’t looked, hunted or needed anything else since.
FASTer Way is truly a lifestyle. There are weeks I’m not as dialed in, but it only takes 2 days for me to jump back in. My energy level goes up and I start feeling great again. Want to know why? It is because I actually learned! Yup, I learned what my body needs, when it needs it, and I have a whole community of people on the same journey cheering me on. Want to know the hardest part of this lifestyle? No, it’s not the Intermittent fasting, once you fuel your body with the right amount of fuel that’s easy. The hardest part was learning to eat the amount of food I needed! I thought this lady was crazy, eating more and working out less... I was never going to see results. Again, guess who was wrong, yup me. I dropped inches, dropped a size in my clothes and started seeing baby muscles in 6 weeks! My energy was through the roof. This Mama was not tired or rundown anymore.

I could not stop talking about this program. I told everyone. I was known as the Intermittent fasting lady at work.
September 2020, I decided I didn’t want to keep this life changing system to myself, I wanted to share it with everyone. October 1st 2020 I became a certified FASTer Way to Fat Loss Coach, so that I could help others have more energy, feel great, sleep better and fight disease.
The last 3 months have been the most rewarding and inspiring for me. Helping others feel amazing, lose inches, and reduce medication is unbelievable. When clients share the Whole Foods their kids now like, my heart explodes. When they ask me to feel their new biceps or send me bicep selfies, I do a happy dance inside. My clients are making lifestyle changes that impact their families and their health and I get to be a part of it. It is the BEST feeling in the whole world.

On the menu this week:

Chili - you can use any chili recipe you have. You could use turkey meat also.
Chicken Marsala - This is a delicious one skillet meal. I did substitute almond flour in for tapioca flour to keep it gluten free(or you could use regular flour if you aren’t going gluten free). I used cream instead of coconut milk because most of the kids do not like coconut and if they would have caught me dinner would have been a struggle. So I chose dairy, instead of hearing teenagers whine, I'm happy with my choice.
Spaghetti Squash Taco Bake trying to slide this by for a Taco Tuesday. Bigfoot would eat tacos every week, but the rest of us are getting a little burned out. This will be a new recipe for us, so I don’t have a lot of suggestions. I have made a very similar meal with just the spaghetti sauce. So fingers crossed that everyone loves it.
BBQ Chicken Bowl with Sweet potato and Coleslaw These BBQ chicken bowls are loaded with so much goodness. It's filling, quick and easy to clean up. For the BBQ chicken, (you could use pork loin), I let it cook all day in the crock pot on low, so that cuts down my prep time in the evening. I also try to make the Coleslaw the night before, because coleslaw is always better the next day. I do skip the pickles and just open a jar. So once the sweet potatoes are done, dinner is ready. You better believe I will be trying those in the Air Fryer I got for Christmas.
Orange chicken- I buy Crazy Cuisine from Costco in the freezer section, and there is enough for 2 meals. I make white rice the night before, and store it in the fridge overnight to make homemade fried rice, with some oil, onion, scrambled egg, and whatever veggies you like. My family prefers peas and carrots in the fried rice, so I usually make stir fry veggies on the side (side note: I don’t like eggs, so no fried rice for me, I’ll have white rice and veggies) here is a Fried Rice Recipe as an option.
Meatloaf- I use oatmeal instead of crackers or bread crumbs.
Chicken Wings - I’m going to make these in the Air Fryer, so good and crispy. I like mine with just salt and pepper. I will probably throw in some french fries too.
Below is what I shared last time Wings were on the menu for those of you who don’t have an Air Fryer yet. I say Yet, because you need one.
Making chicken wings in the oven is actually quite easy. This recipe gives you lots of tips. You could also use an airfryer, or order take out. Just be mindful of the sauces. I prefer mine dry with salt and pepper!
