I hope everyone is ready for a wonderful week! This time of year always seems to get pretty busy. I’m not sure if it's because of the end of school events, stress or what, but there is a lot going on. But, I do know if I don’t make a plan for what we are going to eat, I get more stressed out and the weeks are longer.

This week on the Menu

I have LOTS of NEW RECIPES from SKINNYTASTE on the Menu this week!
Air Fryer Turkey Breast - You know I love my Chunk-o-Turkey from Aldi, but normally I bake it, but this week it's going in the Air Fryer! We’ll have mashed potatoes (sweet potato for me) and green beans also.
Air Fryer Buffalo Chicken Zucchini Skins - yes, I know this is more of an appetizer, but I want to give them a try! I’ll have extra buffalo chicken for the kids and my husband to make nachos with.
Beef and Mushroom Ragu with Spaghetti Squash - this looks so delicious! Serve it over noodles for your kids if they don’t like spaghetti squash.
Salmon Rice and Veggies - I get a box of Seasoned Grill Wild Alaskan Salmon from Costco. Put some sweet potatoes in the oven and rice on the stove to cook and you can relax till it's all done! Great for leftovers also! Here is a great Air Fryer recipe if you want to give it a try!
Chicken Stir fry - quick and easy! Chicken, snap peas, carrots sautéed with fresh ginger, lime juice, and a touch of soy sauce.
Leftovers - I’m going to try and get everyone to eat leftovers so I can have a day off from cooking, we will see how this goes.
Swiss Steak - we love this served over rice, and makes great leftovers. (also known as peppered steak)
