What's for Dinner? December 13th -19th

Less than 15 days till Christmas! So are you on the team who puts the Christmas tree up before Thanksgiving or after? Traditionally, I am a decorate the day after Thanksgiving kind of girl but this year my kids were ready, so we decorated the day before...that's a compromise right. I really love Christmas traditions. We have a lot of great traditions for Christmas in our family. This weekend is one of my favorites, Christmas candy making with my mom, my sister and all the kids. My dad is normally the taste tester of all the goodies.. When the kids were little my mother started the tradition of spending all day making Christmas candies and cookies. . We decorate sugar cookies, make millionaires, Martha Washington balls, buckeyes, chocolate covered peanuts, and more. My Mom used to take orders for her Christmas goodies back in the day (over 30 years ago). It’s a lot of fun to watch her teach my kids how to make each candy. All the kids have their favorite and are in charge of making it every year. I’ll be sure to share some pictures next week of all the fun we have. What are some of your favorite family traditions? This week on the Menu

Chipotle Bowls/Burritos - I love me some Chipotle! So I searched pinterest for the copycat Chicken recipe, Cilantro Lime Rice, and Corn Salsa. I have found another short cut with the chicken. Use the Tyson’s Blacked Chicken (in the freezer section)and cut your prep time down. Open a can of Black beans, and you have Chipotle Bowls at home! My Husband and boys prefer it as a burrito. OR go to Chipotle!
Zucchini Boats -Italian Stuffed Zucchini Boats are the healthy weeknight meal you’ll want to make again and again. This is full of flavor and super easy.
Brinner - AKA Breakfast for Dinner. Enjoy bacon, sausage, eggs. Maybe breakfast tacos with no tortilla for a low carb option (or try a low carb option)
Loaded Chicken & Potato Casserole - think loaded potato with chicken to bump up that protein. Top with ranch or sour cream and enjoy.
Salmon Rice and Veggies - I get a box of Seasoned Grill Wild Alaskan Salmon from Costco. Put some sweet potatoes in the oven and rice on the stove to cook and you can relax till it's all done! Great for leftovers also!
Steak Bites, Sweet Potatoes and Peppers - This is a quick dinner and very filling. You could substitute Red potatoes if you aren't a sweet potato fan.
Lazy Lasagna - Quick and easy, you can add a side salad. You could use gluten free noodles although, it tends to be a little more watery, but tastes great.
As we move through December it is always a great time to reflect on your goals from 2020 and see how you did. Then take some time and make some new ones for 2021. I keep my goals in my phone on a list. I just add the new year goals at the top. I try to keep it at 5. Here are the questions I ask myself.
Set a goal for me and my husband and family. This is usually go on ____ dates this year, or __ weekend getaways.
What’s something I want to do for me?
What’s something that scares me? Out of my comfort Zone
Something BIG - i just learned the term BHAG (Big HAiry Ass Goal) so i will use that term here. This one is my wildest dream! BIG!!
Something fun and different.
I don’t always have a goal for each of these, but they get me thinking and motivated. Take some time and try to come up with one goal and what you are going to put into place to make that happen.
