Hey guys! I hope you all had a good week and found something positive to focus on. I keep seeing quotes and articles about finding people who inspire you, lift you up, celebrate with you. And these all really speak to me. Being in education it’s super easy to get pulled into that “teacher lounge” talk, teaching is hard and frustrating at times. I’m definitely guilty of it. But I’m making a continuous effort to not participate. And even trying my best to take it a step further and drop my positive comment before I exit. That conversation isn’t my thing anymore. I want to talk and visit with people who are solution oriented, exciting, encouraging, and inspiring. Find your people, ones that make you a better person and pull you out of your funk.

Something I Learned
Who loves Peanut Butter? ME!! I love peanuts too, but guess what I just learned...Peanuts can cause inflammation. UGH, is that why I burp for hours, probably. I don’t have a peanut allergy, but peanuts do contain aflatoxins. Aflatoxins is a toxin produced by a species of mold, and these toxins cause inflammation. It does affect everyone differently, so I just wanted to share this information in case you have noticed some inflammation because peanuts could be the culprit. Believe me, this doesn't mean I’m giving up my peanut butter, but I will keep an eye on it and eat it less often. If you are eating peanuts for a protein boost, try chia seeds, they are a protein and fiber source.
Something I’m Loving
With the FASTer Way we try to eliminate dairy due to the inflammation that it causes. I have tried a couple different Protein Powders, but the Arbonne protein powder is delicious. Arbonne’s Protein powders are plant based, (link to ingredients) you can mix this with some water and ice or you could use almond milk to make it a little creamier. This is a great base to add other ingredients (fruit, veggies, peanut butter) to make your favorite smoothie. I have also started to include the Fiber boost, especially on Low carb days to help off set my Carbs. (We count NET Carbs on Low carb days.) If you are looking to add some great fiber to your diet or a good protein shake I highly suggest drying these.
This Week on the Menu Recipes
Turkey breast, Sweet potato, salad - I LOVE the Frozen Turkey Breast from Aldi. They are in the freezer section. You bake in the oven (80 to 90 minutes) then slice, and the gravy packet is included. This is a family Favorite and you could use leftovers for sandwiches or salads. Don’t forget to make the salad Ex-Large for lunch tomorrow.
Big Mac salad Two all-beef patties, special sauce, lettuce, cheese, pickles, onions NOT on a sesame seed bun.

Do you remember McDonald's Big Mac song from the 70s? I bet you sang along just now. This low carb option will hit the spot!
Lemon Garlic Chicken and Green Beans this low carb option is all cooked in one skillet. Quick and easy!
Salmon - I get this box of Seasoned Grill Wild Alaskan Salmon from Costco. Put some sweet potatoes in the oven and rice on the stove to cook. And you can relax till it's all done! Great for leftovers also!
Pot Roast in the Crockpot - This is a simple crock pot meal, it is simply a chuck roast with potatoes and carrots, super simple and an easy weekday meal! Depending on time, you could sear the roast before adding it to the crockpot. But let's be honest, the majority of the time, I toss the frozen roast in the crock pot before work, and still turns out great.
Chicken with Garlic Parmesan Rice Quick, made from scratch chicken and rice, and don’t forget to add your favorite veggie on the side. This is a good meal to prepare on the weekend and have ready for lunch or a busy nights dinner.
Slow Cooker Mexican Soup (FWTFL app last week Friday) This recipe is provided in the FASTer Way app. You can find tons of Mexican soups on Pinterest. This particular recipe had a new variation that I hadn’t tried before. They add brown rice to the soup as it’s cooking.
