Happy March everyone! This coming week is the last week before Spring Break and I’m so excited! Fingers crossed the weather warms up a little bit more. I have big plans for next week... wake up, work out, and sit by the pool all day! Yup that's it. The kids are ready to go somewhere, but when one of them plays a Spring sport in High school we are pretty limited. If the weather is right we will probably go down to the beach. What big spring break plans do you have?

Something I learned:

I’m not sure this counts as something I learned, or more of me just sharing I guess. This week is my birthday and for the past 8-10 years my only request is that I don’t decide what’s for dinner, I don’t cook it, I don’t pick it up, and I don’t clean it up. The 1st year Bigfoot thought it was a test. He was concerned that if he didn’t bring the right food home I would be disappointed. Nope, I don’t care if it's cheap pizza, expensive steak, just please don’t ask me to decide, I’m off duty. There might have been a temper tantrum one year when he asked what I wanted for dinner the day of my birthday. But I have learned to communicate better over the years. Don’t get me wrong, if there is something I want to eat on my birthday, I will request it and Bigfoot makes it happen, this isn’t a trap. Do you have strange requests for your birthday, or is it just me?


Something I’m loving:

I’m loving my LIY planner. I have been following Living in Yellow (YIL) on Instagram for awhile,and I’m sure you have seen Erin’s Picture on Pintrest if you have ever searched for cute outfits. LIY is a fashion blog that has blossomed over the last 10 years, and this month they actually launched their own clothing line “WE”. The LIY team created an amazing Planner a couple of years ago, and this was my 1st year to purchase one, and it’s AMAZING! These planners go on sale in the fall and they sell out by Christmas. I’ll be sure to remind you guys when they launch the 2022 planners this year so you can grab yours!




This week on the Menu Recipes:

Roasted Lemon and Garlic chicken Quarters - The chicken quarters make an excellent dish to serve for any day, but cook time is a little longer, so I usually save this for a weekend meal. Cook extra and you can pull it from the bone and have shredded rotisserie chicken for the week. Steamed carrots and baked or mashed potatoes are my kids favorite sides to this meal.


Pecan crusted chicken - this will be my 1st time to try this, it was recommended by my sister! I think I will prepare a Cobb salad also.


Tuesday is My birthday. I'm not cooking!


Chipotle Bowls/Burritos - I love me some Chipotle! So I searched pinterest for the copycat Chicken recipe, Cilantro Lime Rice, and Corn Salsa. I have found another short cut with the chicken. Use the Tyson’s Blacked Chicken (in the freezer section)and cut your prep time down. Open a can of black beans, and you have Chipotle Bowls at home! My Husband and boys prefer it as a burrito. OR go to Chipotle!


Shrimp or chicken stir fry - you can do both chicken and shrimp, or just one of them. Quick, easy, tasty meal.


Brinner - if you are part of the FWTFL community it’s a Low carb day. Enjoy bacon, sausage, eggs. Maybe breakfast tacos with no tortilla (or try a low carb option)


Homemade Pizza - Pizza dough (needs to rise for 1.5 to 2 hours) or use a store bought flatbread. Then add your favorite jar of marinara, or pizza sauce and toppings. We try to recreate Mod Pizza, so I have a pizza bar set up and each kid makes their own pizza. Our go to pizza toppings: pepperoni, cooked bacon, ground beef, black olives, onions, bell peppers, spinach, and cheese. My daughter-in-law, Cory Jo, took it to the next level last time we had this and made a garlic Italian seasoning butter sauce and brushed the crust, so good! I highly recommend it.

If you don't want to make the pizza crust, pita bread also works. I found low carb pita bread at Kroger.
