What the heck is going on!! Texas just had the worst week in a long time! No it wasn’t a hurricane this time, it was a winter storm that our electrical companies didn’t prepare for. It’s been absolutely ridiculous. If you are from up north I get it, you have temps like this all the time, and y’all are prepared for it, but please keep your memes and jokes to a minimum. There were people who were without power and water for 3 day. Then, they had pipes burst when it did come back on. It’s been a nightmare for a lot of people. We were without electricity for 24 hours, no water. The house was 50 degrees and it was 28 degrees outside. We have a generator for hurricanes, so that came in handy. We plugged in a portable heater in one of the kids' rooms and hung out there all day. Teenagers with no wifi are struggling, but to be honest I was right there with them…” my app won’t open”, “wait I can’t download a book to read''. So no this wasn’t a nice restful week off from work. It was stressful, it was emotionally and mentally taxing for a lot of people. Keep checking on your people, they are still dealing with the clean up this week.
To be honest, I wasn’t sure I was going to put out a blog this week with a menu. Our family didn’t get to follow last week's menu plans, as I’m sure a lot of you didn’t get to either. But, then I remembered, I still have to feed my family so I need a plan.

Something I learned:
Oh man, this week has taught me that being prepared is so important. Bigfoot (my husband for those of you who are new) would be a doomsday prepper if we could afford it. He has done a great job over the years purchasing things we need, while I make jokes, roll my eyes and tease him about being so paranoid. When he hooked up the generator all I could think was “thank goodness he ignored me, and we need to invest in the bigger generator”. We don’t have anything that runs on gas, so it’s not feasible to put in a gas stove, I already checked. But we have our propane camping stove and grill so that will do. If you are like me and a little late on being prepared, make a list of the things you wish you had this last week with no electricity. Purchase and store what you can and save for the larger items, I’m talking to myself here, Bigfoot would be so proud.
Something I’m loving:
So this one is going to be the complete opposite of staying warm...SMOOTHIES. Last week was a smoothie recharge week for VIP members in the FASTer Way. For Texans we are trying again this week. The days I had electricity I still made the smoothies and I was pleasantly surprised. I’m a huge fan of fruit smoothies and I’ll add collagen powder in but I don’t normally add protein powders. With the FASTer Way recharge, all the recipes are adding protein powder, so I have and I’m really enjoying them. I use the arbonne vanilla protein powder and the arbonne chocolate protein powder. These are now my go to plant based protein powders.
Before the Recharge, my protein shake recipe was:
9-12 oz almond milk or cold water
2 scoops Arbonne vanilla protein powder
1 scoop Arbonne chocolate protein powder
1 scoop Arbonne fiber boost
Blend it up and enjoy.
30 grams protein
20 grams NET carbs
4 grams fat
21 grams fiber
This week on the Menu Recipes:
Hamburger Steak - the kids will request this dinner. They call it “Smothered Steak” or the “hamburger patties covered in gravy and onions” thing. Our sides for this dinner are usually rice and broccoli.
One Pan Lemon Chicken -(Low carb day FWTFL) This is a FASTer way menu idea from Oct 12-18. The basic idea is lemon chicken on a sheet pan with some veggies (broccoli, brussels sprouts, potatoes etc) all on the same pan. Cook at 400 degrees.
Beef Tacos- last low carb day of the week for FWTFL Friends, so make it a taco salad with all the fixing, or use a low carb tortilla.
Crock Pot Mississippi Pot Roast - Another great idea for a busy night. Dump everything in the crockpot in the morning and you are done. My kids like this served over mashed potatoes and I'll include a veggie also.
Vegetable Beef Soup - Vegetable Soup is hearty and savory, full of nourishing veggies like tomatoes, corn, green beans, celery, and potatoes, ready in under 45 minutes!
Red Beans and Rice with Sausage - This is an easy and delicious take on a Louisiana classic that you can prepare and cook in 40 minutes! I use Holmes Jalapeno sausage, you could use turkey sausage to cut down on the fat, but not the flavor. Season with hot pepper sauce if you like. This is another option with dry beans in a Crock Pot Red beans and Rice
Grilled chicken, sweet potatoes, & broccoli - I have become a big fan of this Fajita chicken Marinate so I use it all the time. You could do baked chicken also. Bigfoot will grill and I'll bake some sweet potatoes and cook broccoli in the airfryer. And all that means...EASY CLEAN UP!
