What’s for dinner? 10/18

October 18th - 24th 2020


Hey guys!  This Monday kicks off my 1st Round as a Certified Coach for the FASTer Way to Fat Loss. Thank you to those that signed up, this is going to be an amazing journey.  I created this menu to help my new clients get off to a great start eating whole food nutrition, and keeping it simple!


  • Spaghetti and salad - this could be your family Spaghetti recipe, or you could use this One-Pot Spaghetti Recipe (this one takes a little more time). I will use a gluten free noodle for FWTFL.  

    • Time saver tip: When you make that family salad be sure to to make it big enough for leftovers for Monday and Tuesday lunches. Tuesday’s Dinner is also going to include a salad, so you could chop everything on Sunday to cut down on prep time for Tuesday. 

    • Sometimes I have all the cucumbers, tomatoes, bell peppers, mushrooms, boiled eggs, cheese, etc. in separate bowls or on a plate and the kids can build their own salad.  Then I can put all the extra in baggies for Tuesdays Loaded Salad night.


  • Nachos - Let’s be real, this is just beef tacos on tortilla chips: Taco meat, refried beans, taco toppings.  Kids like to use Doritos also.  For a low carb day, you can get Low carb Tortillas, use Corn tortillas, or make it a Taco Salad!


  • Loaded Salads - The kids decide on a meat (protein) and we add it to a salad.  We do breaded chicken strips, you could do blackened chicken strips, popcorn chicken, Chicken Fries.  All those things are in the Freezer section. You could Bake/grill your own chicken breast as a healthier option. My favorite is the Panko Breaded Shrimp from Costco.  See tips from Sunday for the salad.

    • Teenager Tip:  If they need MORE food, I will include a baked potato, and stop and pick up chopped or sliced beef from a BBQ restaurant as a Protein option. .


  • Chipotle Bowls/Burritos - I love me some Chipotle!  So I searched pinterest for the copycat Chicken recipe, Cilantro Lime Rice, and Corn Salsa.  Open a can of Black beans, and you have Chipotle Bowls at home!  My Husband and boys prefer it as a burrito. OR go to Chipotle!

  • Shepherd's Pie - we don’t include the corn, Bigfoot is not a fan of corn.


  • Kabob’s - we do this 2 separate ways.  1 -on the kabob sticks, or 2- no sticks, cooked everything at the same time on a cookie sheet. (use foil for easy clean up)  Cut up your favorite veggies and meats into bite size chunks, brush with some garlic butter sauce and cook in the oven on a lined cookie sheet 400 degrees for 20 mins or until chicken is fully cooked or on the grill. These are our favorite veggies and meats: Chicken, sausage, shrimp, broccoli, zucchini, onions, bell peppers, mushroom and pineapple.


  • Homemade Pizza - Pizza dough (needs to rise for 1.5 to 2 hours) or use a store bought flat bread.  Then add your favorite jar of marinara, or pizza sauce and toppings.  We try to recreate Mod Pizza, so I have a pizza bar set up and each kid makes their own pizza.  Our go to pizza toppings: Pepperoni, cooked bacon, ground beef, black olives, onions, bell peppers, spinach, and cheese. My Daughter in Law, Cory Jo, took it to the next level last time we had this and made a garlic Italian seasoning butter sauce and brushed the crust, so good!  I highly recommend it. 



FASTer Way Tips:

  • Make enough for Leftovers for Lunch the following day, so you don’t have to meal prep for lunch, and Wed - Sunday add fruit to your lunches and dinner to hit that Carb Macro.
