What's for Dinner? 12/20-12/26

Ok guys, so this week's menu will have some gaps, because let's be honest, who knows what we will be eating during the holidays. For our family, Christmas Eve we will be at my In-Law’s house and there are always a ton of options. My Mother-in-law decided years ago, when all the kids were little, that she wasn’t going to force them to have a sit down dinner because they were so excited about presents. She shifted her tradition to a table full of finger foods, build your own sandwiches, snacks and treats. The kids LOVE IT. They help themselves and graze all day. On Christmas Day we will be at my Mom and Dad’s and we always have a “Thanksgiving Menu” type lunch. She asks us every year if we want to change it, but the answer is always nope, we want it again!


To be honest with you, I will be pretty lax with my food choices this week. I’m going to make some good choices early in the week and then just live life with no guilt. I’ll get back on track in a few days. I’m not passing up a great Christmas cookie. The things I plan to stick to will be 80 oz of water, Intermittent Fasting (16:8) and 5 workouts a week. Pick 1-3 things that will be non-negotiables for you over the next week, and just focus on those. I would love for you to share them on social media and tag me. Something about sharing helps hold you accountable.


This Week on the Menu


Loaded Baked Potatoes - You can always go to a BBQ place and order this. But suggestion to FWTFL clients (yes we eat potatoes!!) or anyone wanting a little healthier option. I cook the potatoes at home. This helps me control the portion and the toppings, and I can trade it out for a sweet potato. I will stop and get sliced brisket or chopped beef from a BBQ place with sauce on the side to make the potato “Loaded”. This can be something you get at the grocery store, but they have the BBQ sauce already mixed in. You can do any protein you like. Add your favorite baked potato toppings with your protein and enjoy!


Egg Roll in a Bowl - If you are looking for that fried egg roll flavor, this isn’t it, but you do still get a great Chinese food flavor. I use ground beef instead of the Ground chicken and soy sauce instead of tamari. This is a really quick meal.

Sheet pan sausage Potatoes and Green Beans - this is another quick dinner and if you line your cookie sheet with foil or parchment paper you will have an easy clean up, you're welcome ;)


Chicken Parmesan - I use this recipe technique for the chicken in so many different ways. I have added taco seasoning for chicken tacos too. But for this dinner I will stick with the italian seasonings, but skip the lemon sauce. I will cook some gluten free noodles and open a jar of spaghetti sauce. Check the ingredients of the spaghetti sauce for the least amount of sugar and ingredients you can pronounce. The kids like to make “Chicken Parm sandwiches” so they may choose that, who knows. Quick and easy for the holidays :)

One week till Christmas Day! I know this time of year can be busy and stressful. Take some time to breathe and reflect on all the blessings in your life. I hope you all have some time with your family and friends over the next week.
